Succotash Slow Cooker Chili

So we’re going to have a chili themed month for the next four Slow Cooker Sundays. Chilis are of course wonderful cozy meals for this time of year and are always a hit at Super Bowl parties. This is my personal favorite slow cooker chili recipe. Oh and speaking of parties we went out last night to begin my birthday week festivities. Hello 31!

Slow Cooker Chili

Ingredients

1 pound ground beef

1 small onion, chopped

1-2 stalks of celery, chopped

1 can (14 ounces) black beans, drained

1 can (14 ounces) northern beans, drained

1 can(14 ounces) tomato succotash

1 can rotel tomatoes (i use the one with habanero peppers, but use the mild version of rotel if you don’t like spicy foods)

1 teaspoon cumin

1 1/2 teaspoons southwest seasoning

2 cloves garlic, minced

salt and pepper to taste

Directions

Brown beef with onions and celery in skillet. Drain off fat. Place in slow cooker. Add all remaining ingredients and mix well. Cover and cook on LOW 5-6 hours. Serve with shredded cheese, sour cream, cilantro and jalapenos.

    I never thought about what succotash was! I’ve heard the word before though. Hum…timeto go look it up!

    Everything in the recipe looks delicious except for the succotash, I just can’t take lima beans. Thanks for the rest of the mixture. Looking forward to the rest of the recipes.
