
You all know I recently made a Caramel Bourbon Spice Cake. While baking it, I was reminded how much I love apple butter. I was so pleased when I found a recipe from Midwest Living for a slow cooker apple butter! I had to try it right away! I decided to use sucralose instead of the sugar the recipe calls for. That way I’ll feel a little less guilty when I slather it on my morning bagel!

Slow Cooker Apple Butter
Ingredients
12 cooking apples (I used Rome apples), cored, sliced and peeled
2 cups sugar (or sucralose)
1 and 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice

Directions
Place apples, sugar, and spices in slow cooker and mix well. Cover and cook on HIGH for 4 hours. After 4 hours, stir and leave to cook uncovered for 2 more hours or until apples are very tender and liquid is mostly evaporated. Let cool at least one hour or chill overnight in refrigerator. Use a blender, food processor or food mill to puree the apple mixture until smooth and creamy. Store in refrigerator for a month, or in the freezer up to 1 year.
