
These are some of my favorite cookies and perfect for Holiday Parties or Gift Giving. I made some for my daughter’s preschool teachers this year and will be making more over the next few days for neighbors, friends and some for me.
I hope you enjoy this as much as our family does.
Pecan Lace Cookies with Dark Chocolate
- 1/2 cup Finely Chopped Pecans ( I use a mini food processor)
- 1/3 cup Light Corn Syrup
- 4 T Unsalted Butter
- 1/3 Cup Light Brown Sugar
- 1/2 Cup All Purpose Four
- Pinch of Salt
- 1 t Vanilla
- 1 Bag Dark Chocolate Chips (I use Ghirardelli 60% Cocoa Chips, they are heavenly)
Preheat oven to 375 degrees F.
Place finely chopped pecans on baking sheet in oven for 5-10 minutes until fragrant and slightly toasted. Remove from oven and set aside.
In a saucepan, over med to med low heat, mix light corn syrup,butter and light brown sugar until butter is melted.
Remove pan from heat and let cool for 5 minutes. Add in pecans, flour, salt, and vanilla. Mix until combined.
Use baking sheets covered with parchment. Use a 1/2 teaspoonful for each cookie and place 3 inches apart.
Bake for 8 minutes, rotating after 4 minutes. Cookies are done when they are lacy and light golden brown.
Remove from oven. Slide the parchment paper off the baking sheet and let the cookies set on the counter for at least 2 minutes.
Move the cookies from the parchment to a cooling rack and let rest until completely cool.
While they are cooling, melt the chocolate chips in the microwave. Using power 7-8 microwave 30 seconds at a time, stir and repeat until melted.
Pair up the cookies for shape and size and slather the bottom of one cookie with the melted chocolate. Add it’s “matching” top (bottom sides together).
Let the chocolate set, about 30 minutes to an hour.
