Slow Cooker Sunday!!!

Chicken, chicken everywhere! I’ve been eating lots of chicken lately. I think it’s because chicken can be so easily prepared in so many different ways. Here’s a recipe that is one of my mother’s specialties. I have converted it to a slow cooker recipe. I love to serve wild rice with this chicken dish. Hope you like it!

Slow Cooker Chicken Italienne

Ingredients

1 pound chicken tenders

2-3 eggs, beaten

1 cup Italian herbed bread crumbs

4-5 slices muenster cheese, deli style

1/2 cup dry white wine

1/2 cup chicken broth

Directions

Mix eggs and chicken in a resealable bag. Place bag in refrigerator overnight. Dredge egg soaked chicken in bread crumbs. Make sure each piece is well covered. Cook tenders on stove top, in a little bit of olive oil over medium heat. Place browned tenders in slow cooker. Mix wine and broth and pour in slow cooker until liquid just covers the bottom of the slow cooker, don’t submerge the chicken. Cover with slices of muenster cheese and cook on LOW 2-4 hours until tenders are cooked and cheese is melted.

    This looks like it would be good, me and my daughter love chicken so I just may have to try this. Hubs can eat a sandwich. lol

    I have been trying to find real recipes for our family to actually SIT and eat instead of go go go and this looks like one I might have to try!
