Kiwi Pudding!

I’m from North Carolina, the land of BBQ and Banana Pudding. People are quite passionate about Banana Pudding, the worst offense being Banana Pudding made from banana flavored pudding. True Banana Pudding is made with vanilla pudding and fresh bananas. There is no room for compromise here, in fact my friends and I had a lengthy discussion about this matter on our way home from the Outer Banks recently.

All the talk about pudding and the fresh kiwis I had at BlogHer got me thinking. Kiwi and Pudding, is it possible? Yes, possible and delicious! So, I created Kiwi Pudding, a play on banana pudding, only about a million times better! I have made the pudding kid friendly and lunchbox ready, hitting cafegymatoriums everywhere this fall!


Note on the vanilla pudding: You can make pudding, a small box of pudding will yield 4 servings of pudding for this recipe. Another option is the non-refrigerated pudding available (it’s really good), using one (1/2 cup) container for each serving.

Note on the container: I used a 1.2 cup container, a 1-2 cup range container would work equally well.

Kiwi Pudding (1 serving)

  • 24 honey Teddy Grahams, divided in half
  • 1 green kiwi, diced
  • 1 container or 1/2 cup vanilla pudding


  • Place half of the Teddy Grahams on the bottom of the container
  • Follow with half of the diced green kiwi
  • Add vanilla pudding
  • Place remaining diced green kiwi on top of pudding, placing in the center
  • Finish with the remaining teddy grahams, placing around the outer edges of the pudding


While this is a recipe geared for kids’ lunches, it is a wonderful and cool midafternoon treat for a busy mom too! (or a late night snack for Dad!) Enjoy!!!
